Actually, the best response I've seen to this challenge is by tptacek[0]. You can see his comment here:

To be honest, I would be delighted to have a candidate say something like: "You know - I believe I can do the work you have, and do it well. I also don't believe that these sorts of questions will help you assess whether or not that's the case. Here's an alternative idea ..."
The last candidate who cut short the interview I was doing with an alternative approach still works for me.
